Crunchy green crackers, consisting mostly of pulp extracted from morning juicing, is a phenomenal way to reduce kitchen waste and return fundamental fiber back into your diet. I find sustenance in creativity, especially when it comes to ingredient experimentation. These crisp wafers encourage considerable artistic license – allowing a unique range of complex, earthy flavors and individuality to manifest in every batch I make.
Green Juice Crackers:
- 1 1/2 cups of fresh pulp, collected after juicing
- 1/4 cup organic flax seeds
- 1/4 cup organic chia seeds
- 1/4 cup organic nutritional yeast
- 1 tablespoon coconut aminos
- 1/4 cup filtered water
After juicing, collect the desired amount of pulp and discard any large fibrous pieces such as celery stalk or cucumber rind.
Blend the pulp in a Cuisinart until smooth. Add the other ingredients and blend until fully incorporated.
Press the mixture evenly into a dehydrator tray liner. Score the mixture with a knife to create individual crackers. Dehydrate for 12 hours at 120 degrees. Flip the crackers and dehydrate for an additional 12 hours, or until crunchy.
Enjoy with cashew cheese.
