Double Chocolate Banana Bread

This paleo double cacao loaf, sweetened by ripe bananas and packed with Ayurveda inspired artisanal chocolate is the most dynamic combination I’ve tasted in quite some time. Moist and bittersweet, a single slice serves as a filling breakfast or deeply satisfying afternoon snack. Featuring a coarsely chopped superfood bar boasting an exotic infusion of turmeric from India and sea salt from a family farm in Greece, each bite is guaranteed to balance all three doshas and boost your immunity. Chocolate as medicine? Sounds about right to me.

Double Cacao Banana Bread: 

  • 4 ripe bananas, conventional is fine given the hard exterior 
  • 2 organic, pasture-raised eggs, room temperature 
  • 1 teaspoon organic vanilla extract 
  • 3/4 cup organic almond flour 
  • 5 tablespoons organic coconut flour 
  • 5 tablespoons organic 100% raw cacao powder 
  • 1/2 teaspoon baking soda 
  • 1/2 teaspoon baking powder (baking power isn’t paleo because it contains cornstarch or potato starch and sometimes gluten. Mix 1/8 teaspoon baking soda with 1/4 teaspoon cream of tartar to substitute). 
  • 1/4 teaspoon Celtic sea salt 
  • 1 1/2 bars of Elements Truffles sea salt-turmeric infusion (sweetened only by a bit of honey), coarsely chopped 
  • Optional: raw cacao nibs and Celtic sea salt for sprinkling on top 

Instructions: 

Preheat the oven to 350 degrees. Line a bread pan with parchment paper. 

Blend the bananas, eggs, and vanilla extract in a Cuisinart until smooth. 

In a separate bowl, whisk together the almond and coconut flour, raw cacao powder, baking soda, baking powder and salt. Add the dry mixture to the Cuisinart and mix until fully integrated. Fold in the chopped chocolate bars and pour the batter evenly into the bread pan. Sprinkle raw cacao nibs and Celtic sea salt on top. 

For bread, bake for 30-35 minutes or until a toothpick comes out clean. Cool for 30 minutes before slicing. Once completely cooled, slice generous pieces and freeze in individual bags.

Notes: 

  1. For muffins, bake for 20-22 minutes or until a toothpick comes out clean. 
  2. Excluding the chocolate bar creates an equally dynamic cacao-banana flavor.
