Oven baked sweet potato fries are a huge improvement on the french classic, and can be eaten with abandon given their micronutrients and superfood status. Crisp around the edges but creamy and tender inside, these starchy morsels provide an ideal balance of sweet and savory flavors.
Sweet Potato Fries:
- 1 organic sweet potato
- Organic unrefined coconut oil
- Pink Himalayan or Celtic sea salt
Preheat oven to 450 degrees.
Wash the sweet potato carefully, then cut into long, thin strips. Toss with coconut oil and sea salt and spread evenly across a baking sheet lined with parchment paper.
Bake for 20-25 minutes, flipping once. Serve while hot.
