Raw kombucha is an acquired taste, but one that I adore. Despite its incredible health benefits, this prebiotic food might be hard to stomach when you’re sensitive like me. Fortunately, the same enlivening taste can be easily replicated by reducing ginger into a simple syrup (without added sugar) and pouring it over a glass of crisp sparkling water.
Ginger Italian Soda:
- 1 large knob of organic ginger
- 2 cups filtered water
- Sparkling water
- Squeeze of lime
Peel the ginger and cut it into small, uniform pieces. Place the filtered water and ginger in a medium saucepan and bring to a boil. Reduce, then simmer for 20-25 minutes, or until potent. Cool completely.
Pour 1/4 cup of ginger-infused water into a glass and fill to the top with sparkling water. Finish the drink with a squeeze of lime.
